Recipe – Kidlicious Banana Pancakes

Maple Syrup on PancakesPancakes have long been a staple at the breakfast table, both on and off site.  Some people like syrup on them, others prefer butter, and many more have their own ideas about how pancakes should be best eaten.

My kids, for example, love to load them up with chocolate sauce, sprinkles, frozen raspberries, and any other sweet tasting goodness that we have in stock.

This recipe isn’t about dressing your pancakes though, it’s about cooking a delicious banana taste right into the fluffy breakfast favorite.

This recipe comes from a most unusual place – the Canadian Tire store website.  I couldn’t resist sharing it with you though.  Let’s get cooking!

Cook Time: 10 minutes
Total Time: 20 minutes
Ingredients:

  • 2 cups all purpose flour
  • 2 tbsp sugar
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 2 cups buttermilk
  • 2 tbsp butter, melted
  • 1 tsp vanilla (optional)
  • 1 banana, sliced
Equipment:

  • Zip-style bag
  • Frying pan
  • Bowl
  • Whisk or fork for mixing
  • Spatula for flipping
  • Campfire or stove
Instructions:

  1. Combine dry ingredients in a zip-style bag.
  2. Melt butter in frying pan.
  3. In a bowl, mix eggs and buttermilk along with half of the melted butter. Leave the rest of the butter in the pan for frying.
  4. Pour buttermilk mixture into zip bag of dry ingredients, seal well, and mix by shaking and pinching.
  5. Cut corner out of the zip bag and use to dispense 4-5 inch (10-13 cm) pancakes onto the hot pan.
  6. Add banana slices onto pancakes.
  7. Flip when bubbles appear on the pancakes, and cook until golden brown.
